Recipe: Carrot Hummus

carrotsThis colorful and tasty interpretation of traditional hummus makes a great appetizer or side dish.

Ingredients:

  • 1 bunch of carrots, cut into 1-inch pieces
  • 1 can garbanzo beans
  • 1/4 cup tahini
  • 2 lemons, juiced
  • 2 cloves garlic
  • olive oil
  • cumin
  • paprika
  • sea salt
  • pepper

Directions:

  • Preheat oven to 375*F
  • Roast carrots for 30 minutes or until tendor
  • In a food processor, pulse the carrots, garbanzo beans and some olive oil
  • Add tahini, garlic, lemon juice and spices
  • Mix until smooth (add a small amount of water if needed to achieve desired texture)
  • Season to taste
  • Enjoy with pita, chips, crackers or fresh veggies!
