Recipe: Turkey Fig Compote

  • 2- 3 pints of ripe turkey figs (Walker Farms, if possible)FigCompote
  • 1 cup brown sugar
  • ½ cup cider vinegar
  • 2 bay leafs
  • 1 cup diced sweet onion ( Vidalia please)
  • 1 tbsp oil
  • 3-4 sprigs of fresh thyme
  • 1 cup water

Instructions:

  1. Sweat onions in oil in a heavy bottom sauce pan.
  2. Stir in sugar and vinegar and water.
  3. Add sliced or rough chopped figs and aromatics.
  4. Bring to a simmer and reduce heat.
  5. Cook slowly, stirring often until thick.
  6. Cool and reserve.
